How do people live without fresh milk? What else can be conceived as a side dish or stuffed pancakes, cakes, chocolates? Is life possible without this magical, tempting, unique food of the gods? Such are the questions that accompany the average Argentine contemplating foreign pastries and even while savoring delicious cannoli, donuts, muffins, croissants or anything like a dessert that can be dulce de leche ... do not have it! This small button is enough to show that in Argentina, dulce de leche far exceeds its borders to become a true passion.
The reasons for this love of the palate certainly are in the immediate identification with the identity of Argentina. This has always been popular in food filling in the form of sweets, cakes and pancakes, hard candy, ice cream, pudding and all that the imagination can encompass, it is usually mentioned as one of the great national inventions.
Recipe
There are several recipes for making dulce de leche, each with a small but crucial detail.
One of the simplest requires 4 gallons of milk from dairy, a kilo of sugar and a vanilla bean. To prepare, boil the milk with sugar and vanilla, while stirring continuously with a wooden spoon (you can add a teaspoon of baking soda to the mix, if you want a darker tone). When the point is achieved, remove from the heat and poured into a container on warm water, while continuing stirring until cool.
If you want to prepare it with condensed milk, a can is placed in a pan, covered with water. Put the fire until the water boil, reduce heat to moderate and boil for 90 minutes. Then remove the pan from heat and cool it in their water (if opened while hot can cause burns). Then you can use or store, as the fresh milk packaging will be automatically obtained.
A third version is made with a microwave:
Take 4 cups of skim milk, 2 sugar, 1 / 4 teaspoon baking soda and vanilla essence. Put the ingredients in a large glass bowl, microwave, uncovered. Cook about 80 min. (Depending on oven) over medium heat, without stirring. To remove, add a teaspoon of vanilla essence. Cool it and enjoy.
